This syrup will help you fend off any flus this winter by providing vitamin C. I’d recommend 5ml once a day throughout the cold season.

You’ll need:
Sugar
Water
Jug
Scales
Sieve/jam strainer
Elderberries
Spices e.g. clove, cinnamon, cardamon, ginger etc.

1. De-stem your elderberries and wash. Make sure to discard your unripe berries as these and the stem/bark can be toxic.

2. Cover your elderberries with water and simmer for roughly an hour.

3. Strain off the liquid and measure. For every pint of liquid add a pound of sugar.

4. Bring sugar and liquid to simmer for another half an hour to an hour along with your spices.

5. Strain and bottle.
