Nettle and Dandelion Pasta
Today I made myself a delicious spring concoction!
You’ll need:
Dandelion leaves
Nettle leaves
Half a red onion
1 White onion
Mushrooms
2 cloves garlic (big ones!)
Spelt wholegrain pasta
Olive Oil
Tinned tomatoes
Tomatoe sauce (dolmio type thing or herbs of your own)
Coriander
First I picked the heads of my nettle and dandelion leaves in my garden and gave them a quick wash.

Then I put my spelt pasta on to boil and prepared half a red onion, a white onion, 2 cloves of garlic and lots of mushrooms. These were all pan fried till delicious.

Then I added the dandelion leaves and nettle tops to my boiling pasta for a few minutes till wilted like cooking spinach.

Then add some tinned tomatoes and some dolmio tomatoe sauce or add your own spices and herbs to the tinned tomatoes yourself.

Then it’s time to drain the nettles and dandelion with the pasta and add to the sauce.

I followed this up by adding a little fresh coriander though you don’t have to and served it up with some orange and raspberry juice!
